Kitchen Tip: Mix and Match Flavors

There’s some good advice for cooks trying to buff up on their kitchen skills in today’s Arizona Republic: think of the five flavors—sweet, sour, bitter, salty and umami—the same way an artist thinks of a color wheel. And when you cook, you should be sure to mix and match: Think black pepper and marshmallows or cinnamon in tomato soup, says the paper’s expert chef.
