Consider the Kitchen Scale

The New York Times throws itself behind an incendiary idea in the dining section this morning. The time has come, says the paper, to replace your old measuring cups with a kitchen scale. Some people are stronger than others, some scoop more vigorously—both problems that can lead to uneven measurements. Add that to a new crop of tools that have rendered expressions like ‘a cup of cheese’ meaningless, and the case for a kitchen scale becomes undeniable. (The microplane, for example, has replaced the traditional cheese grater in many kitchens, and produces a much lighter, but more prolific shred.) The Times says not only do digital scales erase the ambiguity of measuring cups, they’ve become quite cheap in the last few years.
